Sugaring Off Poutine with Bacon

Ingredients

  • 5-6 Idaho potatoes (medium size)
  • 250 ml beer (your choice)
  • 1 cup chicken stock
  • 1 cup beef stock
  • 2 tbsp. butter
  • 2 tbsp. flour
  • 2 tbsp. maple syrup
  • 2 tbsp. cornstarch
  • 2 tbsp. cold water
  • Cheese curds
  • 2-3 slices cooked bacon, cut into 2 cm pieces

Preparation

Fries preparation

  1. Cut potatoes into 1 cm thick fries.
  2. Soak fries in beer and water, just covering fries, about 1 hour.
  3. Heat fryer oil to 325 °F. Cook fries a first time for 6 minutes.  
  4. Let fries rest 10-15 minutes.
  5. Increase oil temperature to 375° F. Cook fries a second time for about 5 to 10 minutes or until golden brown.  

Gravy preparation

  1. In a medium sized pot, melt the butter and add flour.
  2. Add the stock slowly to the flour, whisking it in to remove lumps.
  3. Add the maple syrup.
  4. Add the cornstarch diluted with a little water to the gravy mix.
  5. Bring to a boil until gravy thickens. Set aside.  
  6. Assemble the poutine the way you like it.
