Mini-Burgers with Jalapeño Poppers

Ingredients

  • Brioche rolls for mini-burgers sliders
  • 400 g ground beef
  • 4 slices cheese of your choice
  • 1 Italian tomato
  • Arugula leaves
  • 12 slices bacon
  • 4 jalapeño peppers
  • 60 g mild or spicy Italian sausage meat
  • 60 g onion and chive cream cheese (or jalapeño for more heat)

Preparation

  1. Make 50 g patties or eight patties from the ground beef
  2. Preheat BBQ to high. Cook patties over direct heat until a meat thermometer placed in the centre of the patty reads 165° F.
  3. Cook 4 slices of bacon on the grill over direct heat.  
  4. Toast the brioche rolls to desired doneness.
  5. Slice the tomato and cut bacon slices in two.
  6. Assemble the mini-burgers sliders: a few arugula leaves, a slice of tomato and a half-slice of bacon, topping them with condiments as desired.

Jalapeño popper preparation

  1. Cut jalapeños in two lengthwise, seed and remove ribs??? Skin???
  2. Remove sausage meat from the casings and fry meat in a pan over medium heat.
  3. Once the meat is cooked, remove from heat and refrigerate.  
  4. When sausage meat is cool, combine with the cream cheese.  
  5. Preheat BBQ to 350°F.
  6. Stuff the jalapeños with the mixture and wrap with bacon slices.
  7. Cook on the BBQ for 30 to 45 minutes over indirect heat.
