F. Ménard Pizza

Ingredients

Pizza dough

  • For store-bought dough, thaw according to directions

Homemade pizza dough

  • 1 cup warm water
  • 1 tsp. instant yeast
  • 1 tsp. sugar
  • 2 1/3 cups all-purpose flour
  • 1 tsp. salt
  • 1 tsp. olive oil

Toppings

  • String cheese (like Ficello)
  • 1 tsp. parsley
  • 4 tbsp. store-bought pizza sauce
  • Pepperoni to taste
  • 1 cup grated cheese
  • 4 slices F. Ménard bacon, not cooked (or to taste)

Preparation

Dough instructions

  1. Make pizza dough about 45 minutes before assembling pizza. Or it can be prepared 48 hours in advance and refrigerated or frozen in a plastic bag.
  2. Combine the water, yeast and sugar in a bowl. Set aside until mixture foams on top. About 2-3 minutes.
  3. Combine flour and salt. You can use a food processor to knead the dough.  
  4. Add the water, yeast and sugar mixture to the flour.
  5. Process until mixture forms a ball.  
  6. Remove dough from bowl and continue kneading by hand for a few minutes, dusting with flour to keep from sticking.  
  7. Place dough ball in a lightly oiled bowl and cover with a clean dish cloth.
  8. Let the dough rest for 30 minutes in a cold oven with the oven light on.  
  9. Use dough immediately or follow instructions mentioned above. 

Instructions for topping the pizza

  1. Preheat oven to 425 °F.
  2. Make 2 small pizzas about 8 inches in diameter each or one large pizza. (Serves 4)
  3. Add the string cheese around the edges of the dough and fold dough over cheese to make a stuffed crust.    
  4. Drizzle a little olive oil over the middle and edges of the dough.  
  5. Add parsley as a garnish around the edges. 
  6. Top with pizza sauce, pepperoni and grated cheese.  
  7. Cut bacon into 3 cm pieces and place on toppings.
  8. Bake pizza 15 to 20 minutes.
