Easter Cupcakes

Ingredients

Cake ingredients

  • 12 muffin pan liners
  • ¾ cup all-purpose flour
  • ¾ tsp. baking powder
  • 1/8 tsp. salt
  • 1 egg
  • 1 cup sugar
  • ¾ tsp. vanilla extract
  • 3 tbsp. canola oil
  • 1/3 cup milk

Topping ingredients

  • 1/2 cup shortening
  • 1/2 cup margarine or butter, softened
  • 1 tsp. white vanilla or almond extract
  • 4 cups powdered or icing sugar
  • 2 tbsp. milk
  • Food colouring* optional
  • 6 slices bacon cut into small strips about ½ cm wide and 2 cm long, cooked
  • Grated coconut
  • Chocolate mini-eggs
  • 12 mini chocolate eggs with creamy white and yellow centres (Cadbury Cream Egg type)*

Preparation

Cake preparation

  1. Preheat oven to 350°F. Place the liners in the muffin tin.
  2. In a medium-sized bowl, combine the flour, baking powder and salt. Set aside.
  3. In a large bowl, blend the eggs with the sugar and vanilla using an electric beater or food processor for about 10 minutes. The mixture will whiten and triple in volume.  
  4. Add the oil in a thin stream beating continuously.  
  5. Incorporate the dry ingredients alternating with the milk until the mixture is smooth and evenly mixed.  
  6. Fill liners ¾ full of cake mix.
  7. Cook for the first time for about 10 minutes.
  8. Next place the mini cream eggs on top of the cupcakes. Do not press them down.
  9. Bake another 5 minutes.
  10. Check if cupcakes are done with a toothpick. Insert tip in centre of cupcake and if it comes out clean it’s done.  

Icing and garnish preparation

  1. In a medium size bowl, combine the lard, margarine, vanilla, icing sugar and milk with an electric beater or food processor.  
  2. If desired, add the food colouring of your choice.  
  3. Using a pastry bag and decorating tip, ice the cakes. (If you don’t have a pastry bag, you can use a Ziploc bag to ice the cakes).
  4. Once the cupcakes are iced, sprinkle grated coconut over top.  
  5. Next garnish with a bit of bacon to form a kind of nest. Add the mini chocolate eggs to the nest.
  6. Enjoy!
