Caramel candy with pecans and spicy bacon

Bacon ingredients

  • 12 slices F. Ménard bacon
  • 2 tbsp. honey-flavoured whiskey
  • ¼ cup brown sugar
  • 1 tsp. chili flakes

Caramel ingredients

  • 2 cups sugar
  • ½ cup water
  • ½ cup salted butter
  • 1/3 cup clear corn syrup
  • 1 tbsp. honey flavoured whiskey
  • 1 tsp. vanilla extract
  • 1 tsp. baking soda
  • ½ cup chopped pecans


  1. Preheat oven to 400°F.
  2. On a baking sheet covered with parchment paper, spread out the bacon slices.
  3. Sprinkle the bacon with brown sugar and chili flakes. Drizzle the whiskey directly over the bacon.
  4. Bake about 10 to 12 minutes.
  5. When bacon slices are browned and caramelized, set aside to cool.  
  6. In a pot over moderate heat, add the sugar, water, butter and corn syrup.  
  7. Simmer about 10 minutes or until thermometer reads 300°F, stirring occasionally.
  8. Once bacon slices are cool enough to handle, chop them into 1 cm by 1 cm bits. Set aside.  
  9. Once the caramel is lightly golden in colour and has thickened, remove from heat.
  10. Add the whiskey, vanilla extract and baking soda.
  11. On a cookie sheet covered in parchment paper, spread out the caramel. You need to act quickly as the caramel tends to harden.
  12. Garnish the caramel with the bacon pieces and chopped pecans. Let cool about 1 hour.
