Creamy bacon pasta

Ingredients

  • 6 slices F. Ménard bacon
  • 1 French shallot, minced
  • 3 cloves garlic, minced
  • 275 g pasta, uncooked
  • 2 cups chicken stock
  • ½ cup 15% cooking cream
  • 1 cup grated parmesan
  • 2 tsp. corn starch
  • 1 tbsp. cold water
  • 2 tbsp. fresh parsley
  • Salt and pepper

Preparation

  1. Cut bacon into 3 cm pieces.
  2. Cook over medium heat in a large pan until crisp. Set aside.
  3. Keep about 1 tbsp. bacon fat in the pan. Remove the rest.
  4. Add the French shallots and cook about 2 minutes.
  5. Add the garlic and cook about 1 minute.
  6. Next add the uncooked pasta and the chicken stock. Bring to a boil and cook until pasta is tender.  
  7. In a small bowl, combine the corn starch with the water. Add to the pasta mixture.
  8. Add the grated parmesan cheese and the cream. Mix until cheese is melted.  
  9. Garnish with bacon pieces and fresh parsley.
