Chicken and Bacon bites with cream cheese

Ingredients

  • 4 large chicken breasts
  • 2 tsp. chili powder
  • 1 tsp. cayenne pepper
  • 1 tbsp. salt
  • Pepper to taste
  • ½ cup chicken stock (or more if you are short of cooking juices)
  • 1 clove garlic, crushed
  • 1 French shallot, minced
  • Juice of 1 lemon
  • 1 package cream cheese, cut into 3 cm by 3 cm cubes
  • 1 ½ cups grated cheddar
  • 1 Ménard bacon cooking spices
  • 10 slices bacon
  • Chives for garnish
  • Crackers, or baguette slices, whatever your preference

 

 

Preparation

  1. Preheat BBQ to 350°F.
  2. In a large aluminum tray, add the chicken breasts. Sprinkle with 1 tsp. chili powder.
  3. In a measuring cup, add ½ cup chicken stock, garlic and shallots.
  4. Add the mixture to the aluminum tray with the chicken breasts.
  5. Bake until internal temperature reaches 165°F or about 45-50 minutes.
  6. Remove the cooked breasts from the aluminum tray. Remove and reserve cooking liquid.
  7. Shred the chicken breasts and return to tray.
  8. Add 1 cup of the reserved cooking liquid. Add a little more stock if you don’t have enough liquid.
  9. Add the lemon juice, cubes of cream cheese, cayenne pepper, 1 tsp. of chili powder and salt and pepper.
  10. Return to oven for a few minutes until cream cheese melts and sauce is consistent.
  11. Meanwhile, cook the bacon in an oven/BBQ-safe pan. Add the F. Ménard spices during cooking. Cook to desired doneness.
  12. Once it’s cooked, chop the bacon to make bacon bits.  
  13. When the chicken and sauce are ready, add the bacon bits and the grated cheddar.
  14. Return to oven for a few minutes more and stir regularly until cheese is melted.
  15. Garnish crackers, biscotti or bread with a bit of the chicken bacon mixture. Garnish with chives.
