Ingredients

Bacon crumble

  • 4 slices of F. Ménard bacon (available exclusively at IGA)
  • ½ cup (60 g) rolled oats
  • ¼ cup (36 g) all-purpose flour
  • 2 tbs. (25 g) brown sugar
  • ¼ cup (50 g) melted butter

Apple muffins

  • ¾ cup (180 g) light sour cream (it is possible to replace with buttermilk or with plain Greek-style yogurt)
  • 1 tsp. (5 g) sodium bicarbonate
  • ¾ cup (145 g) brown sugar
  • ¼ cup (57 g) tempered butter
  • 1 egg
  • 2 cups (300 g) all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • 2 apples, peeled and diced 1 cm (about 200 g)

Preparation

Preparation of the bacon crumble

  • Preheat the oven to 190 ° C (375 ° F).
  • Place the bacon slices on a baking sheet lined with parchment paper. Cook for about 30 minutes, until the bacon becomes crisp.
  • Remove from oven and place bacon on paper towel. Once cooled, crumble the bacon into large pieces of about 1 cm.
  • Meanwhile, prepare the crumble by mixing the oats, flour, brown sugar and butter. Put in the oven for 10 minutes to obtain a crisp golden crumble. This step can be done at the same time as cooking the bacon.

Preparation of apple muffins

  • Butter 12 muffin tins or put baking tins in paper or silicone.
  • In a small bowl, combine the sour cream and baking soda. Let stand for about ten minutes.
  • Using an electric mixer, beat the butter and brown sugar for 5 minutes or until the mixture becomes creamy. Stir in egg and vanilla.
  • In a large bowl, combine the flour, brown sugar, baking powder and spices. Using a wooden spoon, stir in the butter, brown sugar and egg mixture into the flour mixture, stirring gently.
  • Add sour cream and diced apples. Mix to distribute the apples in the dough.
  • Divide batter into muffin tins. Top each muffin with about 30 mL (2 tbsp.) Crumble and crumbled bacon.
  • Bake for 20 minutes or until a toothpick inserted in a muffin comes out clean. Let cool on a wire rack before unmolding the muffins.
