Ingredients

Ingredients for the salmon tartar

  • 200 g fresh salmon
  • 14 fresh raspberries, cut in two
  • 1 tsp. mayonnaise
  • 1 tsp. hot sauce (or to taste)
  • 1 tbsp. olive oil
  • 1 tsp. old fashioned mustard
  • 1 tsp. white wine vinegar
  • ½ French shallot
  • 1 tbsp. minced chives
  • 2 tbsp. fresh basil
  • Salt and pepper to taste
  • 1 tbsp. crumbled bacon for serving
  • 1 tbsp. panko crumbs for serving
  • Serve on crackers or french bread

Ingredients for the beef tartar

  • 200 g fresh beef pear or fillet mignon
  • 40 g sharp cheddar
  • 1 green onion, sliced fine
  • 1 tbsp. finely sliced chives
  • 1 tsp. Worcestershire sauce
  • 1 tsp. old-fashioned mustard
  • 1 egg yolk
  • Hot sauce to taste
  • 2 tbsp. bacon bits
  • Salt and a pepper to taste
  • Black sesame seeds to taste, for serving
  • Serve on crackers or french bread

Preparation

  1. Cut salmon into small ½ cm cubes. Set aside.
  2. Next combine all ingredients for the salmon tartar and refrigerate until ready to serve.
  3. Garnish with suggested presentation.
  4. Cut beef into small cubes of about ½ cm. Set aside.
  5. Next combine all ingredients for the steak tartar and refrigerate until ready to serve.
  6. Garnish with suggested presentation.
  7. Serve on biscotti or other cracker/bread
