Filet mignon tournedos, pepper sauce and whiskey

  • 4 tenderloin steaks
  • 4 slices of F. Ménard bacon
  • 6 large potatoes, cut into cubes
  • 1 cup strong cheddar cheese, grated
  • 1/4 cup 5% cooking cream
  • 1/4 cup of milk
  • 3 tbsp. butter
  • Salt and white pepper
  • Asparagus
  • 2 bunches of cherry tomatoes
  • Olive oil for cooking
  • Butcher’s rope

Ingredients for the peppercorn and whiskey sauce

  • 1½ tbsp. whiskey
  • 2 tbsp. tablespoon concentrated beef broth (such as
  • Bovril)
  • 2 tbsp. tablespoons concentrated chicken broth (such as
  • Bovril)
  • 2 tbsp. flour
  • 2/3 cup of water
  • 1/3 cup 5% cooking cream
  • 2 tbsp. 4 tablespoons peppercorns
  • ½ tsp. ground black pepper


Meat preparation

  1. Preheat the BBQ to maximum power.
  2. Wrap the filet mignon steaks with slices of bacon, using a butcher’s string. Place the tournedos on the BBQ grill, cooking directly. Cook until the internal temperature reaches the desired doneness of your meat. We suggest a cooking at approximately 125° F for rare cooking and 130° F for cooking medium-rare.
  3. Let your meat rest for a few minutes.

Accompaniment preparation

  1. In a large cauldron, add water and add the potatoes. Cook at high power for about 10 minutes. Check for doneness with a
    fork. Crush the potatoes and add the butter, milk, cream, salt and white pepper. Rectify everything with cream, to obtain a smoother texture. Add the grated cheese and mix well. Reserve.
  2. On the BBQ grills or in an aluminum dish, place the asparagus and cherry tomatoes. Add a little olive oil for cooking. Grill a few minutes, depending on your preference. Reserve.

Pepper and whiskey sauce preparation

  1. In a small cauldron, add the water, beef and chicken broth concentrates, whiskey and cream. Mix well with a whisk. Gradually incorporate the flour, while whisking, to avoid the formation of lumps.
  2. Add peppercorns and pepper. Let simmer for a few minutes until the sauce thickens.
