Bacon sauce ingredients

  • 4 lobster tails
  • 6 slices bacon, cut into small pieces
  • 2 tbsp. butter
  • 4 tbsp. minced garlic
  • 1 cup table cream
  • ¼ cup milk
  • 1 French shallot
  • Juice of a lemon
  • 2 tbsp. minced fresh parsley
  • Salt and pepper to taste

Ingredients for the garlic butter

  • ¼ cup butter
  • 4 tbsp. minced parsley
  • 2 tbsp. minced garlic
  • 1 tsp. cayenne pepper
  • Juice of ½ lemon

  1. Preheat BBQ to 350°F.
  2. Open the lobster tails by making a cut on top, so the meat can be scooped out using a spoon.
  3. Place the meat on top of the empty shell. Set aside.
  4. In a small pot over medium heat, add the butter then the French shallots and garlic.  Cook for about 3 minutes.
  5. Add the bacon pieces and cook until crisp.
  6. Turn heat to low and add cream and milk.
  7. Next add the lemon juice and salt and pepper.
  8. Stir until sauce thickens. Add the parsley and set aside.
  9. Meanwhile, in a cast iron pan or a pan that’s safe for the BBQ, add the butter and let melt.
  10. Add the parsley, garlic, pepper, cayenne pepper and lemon juice.
  11. Cook the lobster about 3 minutes over direct heat.
  12. After 3 minutes of cooking, brush with garlic butter and repeat this process 2 or 3 times until internal temperature reaches 140°F.
  13. Remove lobster tails from heat and smother in bacon sauce.
  14. Enjoy!
