Breakfast Poutine

  • 8 Lafleur breakfast sausages
  • 250 g Lafleur Le p’tit caprice smoked old-fashioned ham, cubed
  • 500 g home-fry style potatoes
  • 6 slices F. Ménard bacon
  • 2 cups store-bought Hollandaise sauce or sauce of your choice
  • 3 tbsp. maple syrup
  • Chives to taste
  • Cheese curds


  1. Heat fryer oil to 375°F.
  2. Meanwhile, add bacon slices to a medium size pan over medium heat. Cook until desired doneness. Crumble and set aside.  
  3. Once the oil is hot, add the potatoes. Cook as directed and set aside.  
  4. In the same pan used to cook the bacon, remove the fat and add 1 tbsp. maple syrup
  5. Add the ham cubes. Heat for about 5 minutes.  Remove from heat and set aside.
  6. Always in the same pan add the sausages and fry for a few minutes until cooked as desired.  
  7. Cut sausages in 2 cm pieces and set aside.  
  8. In a medium size pot, prepare the Hollandaise sauce as directed.
  9. Add 2 tbsp. maple syrup to the sauce. Set aside.
  10. In a bowl, add the potatoes, sausages, bacon and ham. Top with the cheese and sauce. Garnish with chives and serve.
