Scallop and bacon skewers

Ingredients

  • 12 slices of bacon
  • 12 fresh U10 scallops
  • ½ cup olive oil
  • ½ tsp. crushed chili flakes
  • Salt and pepper to taste
  • Red onion cubes
  • Zucchini cubes

Preparation

  1. In a medium bowl, combine the olive oil, salt and pepper, chili flakes and scallops. Mix well and refrigerate. It is possible to marinate the scallops between 15 minutes to 2 hours.
  2. Preheat the BBQ to maximum intensity.
  3. Pre-cook the bacon slices. Do not cook, they must be malleable to roll the scallops.
  4. Once the bacon is cooked, wrap the scallops with a slice. Garnish your vegetable skewer.
  5. Cook the skewers for about 5 to 10 minutes or until the temperature reaches 165° F.
  6. Enjoy!
