Corn on the Cob with Bacon Butter

Ingredients

  • 12 ears corn
  • ¼ cup butter at room temperature
  • 1/3 cup mayonnaise
  • 1 tsp. chili powder
  • ¼ cup fresh parsley
  • Juice of 1 lime
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste

Preparation

  1. Cook corn cobs on BBQ until grilled.
  2. Combine the butter, mayonnaise, chili powder, fresh parsley, lime juice and salt and pepper.
  3. You can add the bacon bits to the butter.
  4. For serving, spread the butter mixture on the cobs and sprinkle the bacon over top if you did not add it to the mixture.
