Autumn Sweet Potatoes

Ingredients

  • 5 medium sweet potatoes
  • 4 slices bacon, cooked and crumbled
  • 50 g goat cheese with pepper
  • ¼ cup 5% cream
  • 2 tbsp. salted butter
  • ¼ tsp. salt
  • About 8 pecans, chopped
  • About 2 tbsp. dried cranberries, chopped
  • Chopped chives for garnish

 

Preparation

  1. Preheat oven to 350°F.
  2. Wash and cut sweet potatoes in two.
  3. Place a sheet of parchment paper on a cookie sheet. Place sweet potatoes on sheet cut side down.  
  4. Roast about 45 minutes.
  5. Once potatoes are cooked, let them cool a few minutes until you can handle them with your fingers.  
  6. Using a spoon, remove the flesh from each potato and place in a medium bowl.  
  7. Add the goat cheese, cream, butter and salt.
  8. Using a mixer, beat until mixture has a smooth texture.
  9. Adjust seasoning to taste.
  10. Place the mixture in the hollowed-out potato skins.  
  11. Garnish with dried cranberries, bacon bits, chopped pecans and chives.  
  12. Enjoy!
