Choco-Bacon cookies

Ingredients

  • 1/4 c. unsalted butter
  • 1/4 c. bacon fat
  • 1 egg
  • 1 c. brown sugar
  • 1 tsp. (5 ml) vanilla
  • 2 1/2 c. oatmeal
  • 1 c. flour
  • 1/2 tsp.  (2.5 ml) baking powder
  • 1/2 tsp.  (2.5 ml) baking soda
  • 1 package of F. Ménard sliced ​​bacon (250g)
  • 1/2 c. dark chocolate chips

Preparation

  • Cook the bacon on a baking sheet lined with parchment paper in an oven preheated to 375 °F for 18 to 20 minutes. Coarsely chop with a knife. Reserve.
  • Meanwhile, cream butter, bacon fat and brown sugar with an electric mixer for about 2 minutes or until the mixture is light and fluffy. Add the egg, the vanilla and mix well.
  • Add the dry ingredients all at once and mix well. Stir in the chopped bacon and chocolate chips.
  • On two baking sheets lined with parchment paper, spread the 24 balls of cookie dough. Bake in an oven preheated to 350 °F for 10 to 12 minutes by interchanging the baking sheets halfway through cooking or until the cookies are golden brown around the edges.
  • Let cool before eating.
