Pancakes with bacon topping

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tbsp. sugar
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 1 ¼ cups milk
  • 1 egg
  • 3 tbsp. melted butter
  • 8 slices F. Ménard bacon
  • Choice of toppings (maple syrup, fruit, etc.)

Preparation

Instructions for the bacon

  1. Preheat oven to 375° F.
  2. Place the bacon slices on a grill over a cookie sheet.
  3. Brush bacon with maple syrup and bake 15 to 20 minutes.
  4. Turn the bacon halfway through cooking and brush the other side with maple syrup. Bake another 15 to 20 minutes.

Instructions for the pancakes

  1. In a medium size bowl, combine the dry ingredients.
  2. Mix together the milk and egg. Whisk in the melted butter.
  3. Set the mixture aside for around 5 minutes.
  4. Heat a non-stick pan over medium low heat.
  5. Place about ¼ cup of the crepe batter in the hot pan.
  6. Cook until bubbles appear on the top of the crepe, about 2 minutes, then turn.  Cook other side for about 2 minutes.
  7. Set aside and cook the remaining crepes.
  8. Add the bacon between crepes, top with fruit and maple syrup.
  9. Enjoy!
