Tomato, bacon and grilled halloumi salad

Ingredients for the salad

  • 10 slices of cooked bacon, cut into large pieces
  • About 5 lettuce leaves
  • 160 g halloumi grilling cheese, sliced
  • 6-7 large mixed tomatoes, sliced

Ingredients for the vinaigrette

  • 4 tbsp. olive oil
  • 1 C. tablespoon fresh lemon juice
  • ½ tsp. teaspoon fresh basil, chopped
  • ½ tsp. fresh oregano
  • Salt and pepper


  1. In a large skillet over medium heat, grill the slices of halloumi cheese, on the two sides. To reserve.
  2. In the same skillet, place the bacon slices and cook until the bacon is crispy. Cut into large chunks and set aside.
  3. Place the lettuce leaves in the bottom of a large plate.
  4. Garnish the sheets with sliced tomatoes, halloumi cheese and pieces of bacon.
  5. In a small bowl, combine the ingredients for the vinaigrette. Mix well and garnish the salad.
  6. Enjoy!
