Ham Tartiflette

Ingredients

  • 250 g F. Ménard ham, chopped into small dice
  • 2 lb yellow-fleshed potatoes
  • 2 tbsp. olive oil
  • 2 tbsp. butter
  • 2 onions, diced
  • 1 clove garlic
  • ¾ cup white wine
  • ½ cup 35% cooking cream
  • 180 g Champfleury cheese, sliced
  • 260 g raclette, sliced
  • Salt and pepper

Preparation

  1. Bring a medium size pot filled with water to a boil and cook the potatoes.
  2. Don’t overcook, they should still be a little firm.   
  3. Slice the potatoes.
  4. Preheat oven to 400°F and butter the insides of a 9×13 in. casserole.
  5. In a pan, add the olive oil, butter and onion. Cook until onion is tender. Add the garlic.
  6. Deglaze pan with ¼ cup white wine. Let evaporate.
  7. Add the ham and salt and pepper.  Fry then set aside.  
  8. In the buttered dish, add about 1/3 of the sliced potatoes to cover the bottom.  
  9. Place 1/3 of the onion/ham mixture on top of the potatoes.
  10. Top with raclette and Champfleury cheeses.
  11. Repeat these steps with the remaining potatoes, onion mixture, ham and cheeses.
  12. Add the wine and cream to the dish to cover the layers of potato, onion, ham and cheese.
  13. Bake for about 45 minutes, or until cheese is well browned.
