Meatloaf and bacon in muffin tins

Ingredients

  • 2 pounds of ground beef
  • 4 slices of bacon steak lacquered with ketchup
  • ½ cup finely chopped celery
  • ½ cup finely chopped carrots
  • ½ cup finely chopped onions
  • 2 cloves of garlic, finely chopped
  • 2 eggs
  • 1 tablespoon Dijon mustard
  • 1 tablespoon ketchup
  • 2 teaspoon dried oregano
  • 2 teaspoon dried basil
  • 1 cup oats
  • 1 teaspoon salt
  • Pepper to taste

 

Finishing sauce for coating the bacon steak:

  • ½ cup Ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 2 teaspoon yellow mustard
  • 2 teaspoon sriracha sauce

Preparation

For the meatloaf:

  • In a large bowl, combine all the ingredients for the meatloaf, except the 4 slices of bacon steak.
  • Fill a pan of 12 muffins with the preparation.
  • Coat the meatloaf witht the sauce.
  • Bake 20 to 25 minutes in the oven at 375F.

For the bacon:

  • On a baking sheet, spead the bacon steak slices, then brush with the sauce
  • Bake 25 minutes in the oven at 375F.
