Avocado, egg bacon toast

Ingredients

  • 2 slices multigrain bread
  • 2 eggs
  • 4 slices cooked bacon
  • 1 avocado
  • 2 slices tomato
  • 1 green onion
  • 1 tsp. lemon juice
  • Salt and pepper to taste

Preparation

  1. Toast the bread.
  2. Crush the avocado with a fork to make a paste. Add the lemon juice and salt and pepper.
  3. Spread the avocado on the toast and top with the cooked bacon slices.  
  4. Cook the eggs individually to your taste.
  5. Cut the tomato slices into cubes and slice the green onion diagonally. Use to garnish the egg.
  6. Add salt and pepper to taste.
  7. Enjoy!
