Flaky Asparagus, Cheese and Bacon Tart

Ingredients

  • 1 package store bought pastry dough (thawed according to instructions)
  • 2 tbsp. Dijon mustard
  • 1 tbsp. balsamic vinegar
  • 1 cup Emmentaler cheese, grated
  • 1 cup Gruyère cheese, grated
  • About 10-15 asparagus spears (depending on the size)
  • 4 slices cooked bacon, crumbled
  • Reduced balsamic vinegar coulis (to taste)
  • Salt and pepper to taste

Preparation

  1. Preheat oven to 400°F.
  2. On a cookie sheet, place a piece of parchment paper.  
  3. Unroll the flaky pastry on the cookie sheet.
  4. In a small bowl, combine the Dijon mustard and balsamic vinegar. Spread the mixture directly on the uncooked pastry.
  5. Top the pastry with the two cheeses.
  6. Cut off the asparagus butts, about ½ inch, depending on their length and condition. 
  7. Place the asparagus on the flaky pastry.
  8. Salt and pepper to taste.
  9. Bake the tart about 10 minutes or until crust is lightly browned.  
  10. Remove tart and top with crumbled bacon and return to oven for another 5 minutes.  *Add the bacon at the end of cooking as it is already cooked.
  11. Remove from oven and let cool a few minutes. Drizzle over with balsamic coulis.
  12. Cut into pieces.
  13. Enjoy!
