Potatoes Monte Carlo

Ingredients

  • 4 slices cooked bacon, crumbled
  • 4 large russet potatoes
  • 1 ½ tbsp. butter
  • ¼ cup milk
  • ½ cup grated cheddar (plus a little more for garnish)
  • 2 tbsp. sour cream
  • 1/8 tsp. garlic powder
  • 1 green onion, white part only, minced
  • 1 green onion, sliced

Preparation

  1. Preheat oven to 350°F.
  2. Place the potatoes on a baking sheet.
  3. Pierce potato skins with a knife or fork.
  4. Bake about 1 hour.
  5. When potatoes are done, remove a section of skin to create a hole.
  6. Scoop out flesh, leaving about 1 cm all around.
  7. In a medium bowl, place the potato flesh and mash well.
  8. Add the butter, milk, sour cream, garlic powder and white part of onion and mix well.  
  9. Add the grated cheddar.
  10. Return the potato mixture to the skins. Top with grated cheese and return to oven for 5 minutes. To brown cheese so it bubbles, you can set oven to broil for a couple minutes. Garnish with green onion and bacon.
