Argentina Shrimp and Bacon Salad

Ingredients

  • 6 slices bacon cooked and crumbled
  • 1 ripe avocado, cubed
  • 340 g of Argentine shrimp
  • 1 cup mixed cherry tomatoes, cut in 4
  • 2 leaf lettuces, cut
  • 1 C. 1 tbsp olive oil for the shrimp
  • 1/4 cup olive oil for the vinaigrette
  • ½ tsp. dried parsley
  • Juice of half a lemon
  • 1/3 c. crushed chili
  • 1/3 c. dried oregano

Preparation

  1. In a bowl, add the shrimp, 1 tbsp. tablespoon olive oil and parsley. Mix together.
  2. On the BBQ or in a skillet, place the shrimp and cook for about 5 to 8 minutes.
  3. In a salad bowl, add the lettuce, tomatoes, avocado and bacon.
  4. Mix the ¼ cup of olive oil, the crushed chili, the oregano and the lemon juice, in a small bowl. Add dressing to salad.
  5. Enjoy!
