Scallop tartare with bacon



  • 4 portions


  • 1 pkg of scallop cubes for tartar Sushi at home
  • 2 tbsp. lime juice
  • 1 tsp. (5 ml) lime zest
  • 1 tbsp. olive oil
  • 1 tbsp. japanese mayonnaise with sesame
  • 1 tbsp. fresh chives, chopped
  • 1 tbsp. fresh cilantro, chopped
  • 1 green onion, finely chopped
  • 1/4 cup green apples in small dice
  • 1/4 cup of F. Ménard bacon, cooked and chopped
  • 2 tsp. black & white sesame seeds
  • Green tabasco, to taste
  • “Fleur de sel”, to taste


Thaw the tartar scallop tube as indicated on the package.

In a bowl, mix all the ingredients well and season to taste. Be careful with the “Fleur de sel”, the bacon is already salted.

Serve as an appetizer in small spoons and garnish with chives. Serve with croutons or wonton wrappers that have been previously deep-fried.
