Ingredients

  • 4 Yukon Gold potatoes

  • Vegetable oil for frying

  • Cheese curds

For the meatballs

  • 400g minced beef
  • 100g F. Ménard bacon, finely chopped
  • 1 egg
  • 2 tbs. parmesan cheese
  • A few tablespoons of breadcrumbs
  • Olive oil

For the sauce

  • 3 tbs. cornstarch
  • 2 tbs. water
  • 6 tbs. butter
  • 1/4 cup all purpose flour
  • 500 ml beef broth
  • 250 ml of beer
  • Pepper to taste

Preparation

  • Prepare the meatballs by mixing the meat with the bacon.
  • Add the egg, parmesan, salt and pepper.
  • Wet your hands, make meatballs the size of a walnut and coat well with breadcrumbs.
  • Bake the meatballs in a preheated 375 ° F oven for about 20-25 minutes (or fry them in the fryer).
  • In a small bowl, dissolve the cornstarch in the water for the sauce and set aside.
  • Melt the butter in a pan and add the flour. Cook, stirring regularly, for about 5 minutes or until the mixture turns golden.
  • Add the beef broth and beer and bring to a boil, stirring with a whisk. Stir in cornstarch and simmer for 3 to 5 minutes or until the sauce thickens. Season with pepper. Taste and add salt if necessary. Keep on the stove until the fries are ready.
  • Cut the bacon into small cubes and cook in a pan over medium heat until crisp. Place on absorbent paper and set aside.
    Peel and cut the potatoes into sticks.
  • Rinse the potatoes in cold water until the water becomes clear, drain and wipe with paper.
  • In a fryer preheated to 300 ° F, immerse the potatoes in the oil for about 7 minutes before removing them.
  • Take out the basket and let the fries drain. Meanwhile, bring the temperature of the fryer to 350 ° F then fry the potatoes a second time for about 1 minute to give them a nice crispness.
  • Once well browned, place the potatoes on a baking sheet with paper towel and salt immediately.
  • Assemble the poutine in a large plate with the fries, cheese and bacon. Pour the sauce in abundance and serve.
