Liege style salad with bacon

Ingredients

  • About 600 gr. small size potatoes
  • About 500 gr. green beans
  • 8 slices of F. Ménard bacon, cut into pieces
  • 1 half golden onion, coarsely chopped
  • 2 hard boiled eggs
  • 4 tbsp. olive oil
  • Salt, pepper
  • Salad to serve (optional)

Preparation

Preheat the oven to 200 °F;

Wash the potatoes in cold water, cut them in half and put them on a baking sheet. Season with 3 tablespoons of oil, salt and pepper and let roast for about 20 minutes (or more, depending on the size of the potatoes) or until the flesh of the potatoes is tender, but still firm. Put the potatoes in a bowl and reserve;

In another pot, cook the green beans for 17- 20 minutes, then drain them * and add them to the potatoes;

In a pan, put the remaining oil and cook the onions over low heat for 5 minutes, as they should not dry too much;

As soon as the onions are tender, remove them from the pan and set aside. In the same pan, add the bacon and fry it for 30 seconds -1 minute, then add the onions again and deglaze with wine vinegar. Let reduce a little, add salt and pepper;

Pour the contents of the pan into the bowl with the potatoes and beans, gently mix;

* If you want to preserve the beautiful green color of the beans, you must immerse them in a bowl of cold water!
