Grilled cheese with bacon and apples

For each grilled cheese:

  • 2 slices of bread
  • 2 slices of F. Ménard bacon
  • 1 slice of medium cheddar cheese
  • 1 slice of Swiss cheese
  • 1 small apple from Quebec
  • 1 tbsp. mayonnaise
  • 1 tbsp. Dijon mustard
  • A little bacon fat!


  • Bake the bacon in the oven at 375 °F for about 20 minutes (or until it becomes crispy!).

  • Remove the bacon from the baking sheet and reserve. Do not throw away the fat!

  • Spread mayo and mustard on a slice of bread.

  • Add the two slices of cheese, then the slices of bacon.

  • With a mandolin (or a sharp knife), make very thin slices of apples (with the mandolin, it is not necessary to remove the skin or even the heart).

  • Place 4 or 5 slices of apples on top.Lay the second slice of bread.

  • With a brush, take a little bacon fat and brush the outside of both slices of bread.

  • Cook the grilled cheese, either with a panini grill as in my case or in a pan over medium heat, crushing the sandwich with a spatula and turning it over after a few minutes, until the bread is golden brown and the cheese is melted.
