French Toast “Grilled Cheese” with bacon

Ingredients

For each grilled cheese:

  • 2 slices of bread of your choice
  • 2 eggs, at room temperature
  • 1 tbsp. of milk
  • 4 F. Ménard bacon rounds
  • 2 tbsp. butter
  • 2 tbsp. maple syrup
  • 1 cup of your favorite cheese for grilled cheese
  • Salt and pepper

 

Preparation

  • Preheat your pan or hotplate over medium heat. Cook the bacon until crispy, but lightly rubbery. Drain the bacon fat.

  • Whisk together an egg, milk and maple syrup. Add a pinch of salt. Dip the bread in the mixture.

  • Melt half of the butter in the pan. Increase the fire to medium low.

  • Add the slices of bread and cook until golden brown, about 5 minutes (or more, depending on the thickness).

  • Add the remaining butter. Turn the toasts over and cover each side with cheese. Add half of the bacon on one slice. Stack both slices of bread and let the cheese melt while the other side is cooking, about 5 minutes.

  • Meanwhile, season and cook a mirror egg. Remove the sandwich from the pan. Garnish with the remaining bacon. Slip the egg on top and serve with a drizzle of maple syrup, to taste.
