Bacon steak pancakes

Ingredients

  • 1 1/4 cup flour
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • Salt
  • 1 egg (egg white must be separate from the yolk)
  • 1 1/4 cup milk or buttermilk
  • 1 tbsp melted butter
  • 1/2 tsp vanilla extract
  • 1 slice of bacon steak
  • 4 slices of bacon
  • Maple syrup as desire

Preparation

  • In a large bowl, add flour, baking powder, sugar and salt. Mix;
  • In another bowl, beat the liquid ingredients : egg yolk, buttermilk (or regular milk), butter and vanilla extract; 
  • Pour the liquid ingredients into the bowl of dry ingredients, then fold the preparation with a Maryse (spatula with the silicone tip). Add the egg white, then continue to gently fold the mixture. Let rest 15 minutes;
  • Meanwhile, in a pan, cook the bacon cubes for 5 minutes, then reserve in paper towel. In the same pan, cook the 4 slices of Bacon F. Ménard steak 5 minutes per side, then set aside;
  • In a pan, add 1 tbsp. of butter, then about 1/3 of the pancake mixture. Cook for 3 to 4 minutes, add a few cubes of bacon, then turn over the pancake. Continue cooking for about 2 minutes. Keep warm while cooking the other pancakes.
  • To serve, stack the pancakes one on the other, garnish with bacon steaks, then drizzle with maple syrup.
